Chicken Enchilada Roll ups-Crockpot
1 1/2 lbs boneless chicken breasts cut into strips
1/2 cup plus 2 TBSP flour
1/2 tsp salt
2 TBSP butter
1 can chicken broth
1 small onion, diced
1 small can diced jalapeƱos
1/2 tsp dried oregano
2 TBSP milk
flour tortillas
cheddar cheese
DIRECTIONS:combine 1/2 cup flour & salt in resealable plastic bag. Add chicken strips & shake to coat with flour mixture. Add Butter to skillet over med. heat & brown chicken in batches for 2-3 minutes per side. Place chicken in crock pot. Add broth to skillet & scrape up any browned bits. Pour broth mixture over chicken. Add onion, jalapeƱos & oregano. Cover, cook on LOW 7-8 hours or HIGH 3-4 hours. When cooking time completed-- Combine remaining flour & milk in small bowl, stir to form paste & then stir into chicken mixture. Cook on HIGH til thickened. Spoon chicken mixture onto center of tortillas. Top with cheese, fold & serve.

What a fun day!! Shonna tells me how she wants to scrapbook some special albums for her family.... OMG! somebody new to scrapbook with??? you know I was all over that!! We got up and went to Wal-Mart, Hobby Lobby, Michaels & their local scrapbook store...they have a monthly kit too. It is a fun kit. I might have to look into it. hmm.... Cuz I need more stuff to play with you know. Samantha & Delaney woke up about a half hour after we left & wanted us to go back and get them. So we all 4 went out to lunch & the girls decided they needed to make fleece blankets. Shonna too. Delaney & Sami have been on blanket making patrol all night & Shonna & I have been Scrapbooking. She found 3 kits at Michael's. They are the S.E.I. kits where everything is done for you. She really likes them so far. I will lure her further and further into our "underground club" lol We have done 1 load of laundry, had an awesome home made dinner, made almost 4 blankets & 2 completed (except for the pictures) scrapbooks! I LOVE VACATION!!! We are also 1/2 way thru our bottle of vino for the night!! ta ta.....

Las Vegas NV


What a quick visit! We stopped over in Las Vegas to visit Julee & her girls on our way to Colorado on our 1st day of vacation! We got to celebrate Julee's birthday with her & watch the girls have a swimming lesson. They are AWESOME swimmers! It was a lot of fun to visit for the evening & catch up. We left Vegas about 8 & drove up to St George Utah to spend the night. We first stopped at the Best Western. They only had suites left to the tune of $190 a night. They did offer a 10% auto club discount tho.... We ended up next door at Quality Inn. It was great. We each had our own bed & we got to park right outside our room. It made unloading & reloading our car much easier! We slept in and made it into Grand Junction today about 3pm! It was a long boring drive with my navigator sleeping the last hour into town! VERY Helpful... She thinks I drive like a grandma anyways, so the break (of quite) was nice... We are opening our first bottle of wine for the evening now, so I must sign off.....

Packing it up!
Packing is not all it is cracked up to be!! Delaney & I have been packing for what seems like hours & days... I have 1 Xtra large duffel bag. She has 2 large ones. Mine has room. Hers do not. Getting them in the car tomorrow will be interesting. We are going to Las Vegas to have dinner with Julee & her girls for her birthday & then driving on to Mesquite & spending the night. Then we will invade the Masce's in Grand Junction! We leave after we deliver Carson to the vets office that will be boarding him. He is way to much of a puppy to leave home alone with Pippi for 3 weeks! She would probably rip his face off before we got back! She will be sad to see him come home when we return. lol Delaney has never had to drop her dog off when we go on these trips. I have always done it alone. I have always blubbered like a parent on the first day of school who's kid just waves & doesn't care that they are being turned loose. She is harder hearted then I am. She will probably not cry, sniff or even tear up while I on the other hand will probably do all of them! Her dog drives me nuts too!! She might surprise me & tear up a bit. Time will tell..... The rest of my packing is calling me. LOUDLY.

the $2 purse curse!
I have a clearance rack fettish. I am not shy about it. I found the cutest purses for $2 at Kohl's & bought them in a few colors. For a few people. NEVER AGAIN! Tracie's car got broken into 2 weeks ago. They broke out her side window & snatched her awesome $2 purse. They left the CD holder & a number of other valuable items in the car, including cash. Today she gets her other $2 purse ripped out of her hand while she is walking out of Michael's by some kid on a scooter. She hollers & chases him & calls the police after he jumps the fence to get away. They did drive her over to where they had detained a young man to see if it was him. No such luck! Today's haul was her birthday cash & some michael's gift cards. She was able to produce receipts where she had used all the gift cards, so they could cancel them & issue a new card to her for those. She must of had a premonition about this due to the fact that she had her ID, bank card & cell phone in her pocket. She requested that I never, ever, under any circumstance get her a purse again. So the moral of the story is when you go to buy a purse, always buy the one you want, no matter how expensive it is. If it is a little cheepy one, it will get stolen in one way or another! I am off to Harvey's now... they have a new collection out.... it is beautiful.....
